Chicken asparagus tomato quinoa bowl


Ok, not gonna lie! I outdid myself! If Tim liked it, you KNOW it's good! So, I love making bowls, and I just threw this together (not eve kidding) Here's how easy it was.


1) Cut up chicken in bite size pieces, then saute in lime oil seasoned with salt, pepper, onion powder, garlic powder and Braggs aminos.


2) Cook quinoa in rice cooker with chicken broth


3) Roast asparagus and tomatoes in lime oil seasoned with salt, pepper, onion powder, garlic powder and paprika.


4) Layer: quinoa, chicken, veggies and top with sauce sprinkled with paprika.


Lime mango sauce: 1/3 c. yogurt

1/3 c. mango

1 to 2 tsp. chipotle paste (I used thai paste)

1 T. Lime juice

BLEND
